Yellow Thai Curry & 'Villa Maria' Sauvignon blanc

Hello everyone! Welcome to this new segment, Wine & Dine! Join me on a journey of discovery! Every month we will be tasting a new wine, from all over the World and pair it with a delectable savoury or sweet dish! This segment is especially curated by my boyfriend, who works as a sommelier in a leading Maltese restaurant. Ingredients (serves 2)

  • Yellow Thai Curry Paste
  • 1 teaspoon fish Sauce 
  • 1 teaspoon light brown sugar
  • Coconut cream
  • 2 cloves of garlic
  • 2 shallots 
  • 3 spring onions 
  • 1 tablespoon grated ginger
  • 15 Mediterranean Red Prawns (don't forget to remove the veins!)
  • 10 baby asparagus sprigs or broccolini 
  • One grated carrot
  • 5 cherry tomatoes, chopped in half
  • 5 pineapple chunks (be careful, these may be overly sweet, omit the sugar if necessary) 

Method:

  • Start by adding a tablespoon of coconut oil in a large frying pan. Add two tablespoons of yellow curry paste (this paste has medium heat, use green curry for a milder version of this dish).
  • Stir the paste until a rich aroma develops and quickly add 150 ml of coconut cream. Stir using a wooden-spoon until it starts bubbling. Add around 100 ml of water and stir until boiling.
  • Add the remaining 100 ml of cream and stir continuously. Once it starts bubbling, quickly add all the prawns and vegetables and cook until the prawns appear to be whitish in color.
  • Serve the curry sauce with 80 g of rice noodles or with any rice of your liking.

Clear, Pale Intensity, Lemon-Green Colour

Nose:

Clean, Medium (+) Intensity, Primary aromas of tropical fruit (pineapple, mango, passion fruit), Herbal (eucalyptus, mint), Herbaceous (grass, tomato leaf)

Palate:

Dry, Medium (+) Acidity, Medium (+) Body, Medium Alcohol, Pronounced Flavor Intensity, Primary flavors of tropical fruit (passion fruit, melon), Green Fruit (gooseberry), Herbaceous (asparagus, tomato leaf), Long finish

Conclusion:

Outstanding Quality, Suitable for bottle ageing (5 years), It has a perfect balance between the fruit, acidity and sweetness. It has a good complexity due to the extended maturation period in the bottle.
