Teriyaki beef stir-fry & Cannonball IPA
In fact, this week I wish to share with you all, my first dish for my new collaboration with a local e-commerce company, Popp. Their selection of craft beers and unique snacks can definitely spice up your weekend at home! Unfortunately, the pandemic has taken a toll on our social lives, however, one can still enjoy a cold beer at home and savour the moment! Home cooking is also a perfect activity to connect with your family members and create an exquisite beer-pairing to enjoy, taste and discover together, which is definitely restaurant quality!
The first recipe I will share with you today is my go-to teriyaki beef stir fry! This is one of our weekend favourites at home...we use up all our remaining vegetables at the end of the week (say no to food waste of course!) and whip, within minutes, a tasty dish, bursting with flavours! This dish also goes exceptionally well with the Cannonball IPA from Magic Rock Brewing, available locally at POPP! This craft beer is as delightful on the nose, as it is on the palate! The tropical fruity flavours and resinous hops truly complement the rich and sweet flavour of the teriyaki! I couldn't think of a better amalgamation of flavours!
Ingredients: for 2 people
- 285g of beef fillet
- 160g of rice noodles
- 2 cups of mixed vegetables
- 1 cup of sliced mushrooms
- 1 tbsp sesame seeds (garnish)
For the teriyaki sauce
- 3 cloves of garlic
- 1 tbsp olive oil
- 2 tspn grated fresh ginger
- 1/2 cup of soy sauce
- 1/4th cup of brown sugar
- 2 tbsp honey
- 3 tspn cornflour
- 2 tbsp water
Method:
- Season generously both steak fillets with salt and pepper
- In a heated non-stick pan, add the oil and one garlic clove and sear the steaks on both sides and cook for around 5 minutes until the steak is medium rare
- Remove the steaks and let them rest until your prepare the next ingredients.
- Boil some salted water and add the rice noodles to soak for 8 minutes (or as specified on the pack)
- In a heated wok, add some sesame oil or olive oil and stir fry the vegetables
- In a separate pan, add the garlic and ginger and cook until fragrant. Add the soy sauce, sugar, honey. Mix together.
- Add the cornflour dissolved in the water to form a paste to the soy sauce mixture and heat until it thickens.
- Plate the noodles, beef and vegetables and pour the thick delicious sauce on top. Garnish with sesame seeds and enjoy!
